This recipe for Grapefruit Sandwich Cake is by the lovely Beca from Great British Bake Off. I’m incredibly sad that she’s gone, I’ve spent this week very confused about where my loyalties now lie. I loved Ruby to start with yet now I want to bop her on the head with a mixing spoon. Kimberley was very pleasant until she got super smug and Frances… I want to sasy I don’t like her, but I fear that would be a lie. I think it’s plain old jealousy. I mean, HOW clever and creative do you need to be with a cake, for crying out loud?
I’m very happy indeed with a good old two layer cake with allllllll the buttercream. Or, in this case, cream cheese icing (frosting?) This one is tangy and zesty and downright delicious. Depending on how much grapefrui syrup you use you’ll get a sponge that’s somewhere between moist and gooey – neither of these are a hardship, lets be honest. You’ll also end up with an excess of grapefruit curd which is the BOMB on toast. Yum.
